Our History
The very first Hoshino Coffee opened on 18 March 2011, just one week after the Great East Japan Earthquake. The café was built on the grounds of a newly opened Sunmerry bakery restaurant in Warabi, Saitama Prefecture—a location operated by HD, which had acquired the Sunmerry brand in 2009.
Hoshino Coffee is the product of a thoughtful and forward-looking union between two long-standing listed companies: Doutor Coffee, a coffee enterprise, and Nippon Restaurant System, a restaurant operator. Recognising that the 21st century would demand new strengths, the founders of both companies agreed in 2007 to merge—leveraging their respective expertise in beverages and cuisine to thrive as a truly excellent company in the decades to come.
Doutor Coffee, founded in 1962 as a coffee roasting business, has grown over more than sixty years into a leading coffee company in Japan. Since opening its first Doutor Coffee Shop in 1980, the company has expanded not only its roasting operations but also its presence as a café chain—largely through franchising. It operates its own coffee plantation in Hawaii and oversees the entire coffee journey: from cultivation and roasting to café management, product manufacturing, and sales. By the year 2000, the Doutor Coffee brand alone had surpassed 1,000 outlets nationwide.
Nippon Restaurant System, established in 1973, opened its first restaurant Bolts—a speciality Indian curry shop—in Udagawachō, Shibuya, in 1974. Just two years later, it launched Yōmenya Goemon, a Japanese-style pasta restaurant, on Kōendōri in Shibuya. The company has consistently developed concepts that delight customers, growing to operate over 40 unique restaurant formats. Through a strategy of full internal integration, Nippon Restaurant System manages nearly all aspects of food processing, logistics, and operations in-house. This structure allows for the efficient operation of over 500 locations, primarily directly managed, and supports expansion into areas such as health-focused food markets and specialty supermarkets.

Building on the history weʼve nurtured, we now look outward—offering an approach that blends Japanese cultural nuance, the quiet elegance of the kissaten tradition, and the comforting appeal of yōshoku cuisine such as morning sets, soufflé pancakes, omurice, and spaghetti. By intertwining Hoshino Coffeeʼs past and future, we create an experience that no other café can replicate—a world of its own, steeped in authenticity, nostalgia, and quiet sophistication.
